When I did my research into what Gluten Free people were looking for, it was for help to show where to get started with going Gluten Free.

I remember how difficult it was for me in the early days, and I guess you found this too.

The initial experimental FLOPS!

I thought that I could just keep baking, so I substituted ordinary flour with Gluten Free flour in my tried and tested Gluten Packed Yorkshire Pudding recipe, a recipe that we have followed for generations…

You know what happened don’t you;

It was an absolute disaster! If you’ve ever tried to do this with Yorkshire Puddings, you’ll know exactly what I mean.

The same with cakes, they were so dense, heavy and crumbly and really not nice at all.

I realised, this thing they called “Gluten” was really the backbone of all our favourite recipes.

I then thought, well let me buy the best Gluten free recipe books…

And honestly, I spent a fortune, as one after another after another didn’t have the type of recipes that I liked.

And I’m sorry, but I’m not blending my own flour for anyone!

I just wanted to create cakes like I’d always baked in my kitchen.

You know, those “go to” family recipes from our childhood, those recipes that I created from my pre Gluten Free food adventures with soft, delicious cakes, incredible fillings and such amazing savoury treats.

I wasn’t prepared to give up on my quest for good recipes.

I was looking for recipes that I loved to eat, those in the recipe books that I’d livingly bought over the years. I really didn’t want another recipe book featuring another orange polenta cake as I have several of these great recipes already.

When I got the books, the pictures did look nice, but, the combination of ingredients really didn’t create they type of beautiful cakes that I wanted.

Honestly, in some of the recipes books… the list of ingredients stretched me! Even my amazing local Heath Food Store, with the amazing Mandy who owns Natures Harvest in Leighton Buzzard who stock (or will order in) anything I’ve ever needed didn’t stock them. I did source them in some far flung shops, however I really wasn’t 100% certain they were packed in gluten free environments.

So in the end…

I threw them all out of my Kitchen!

They just didn’t work for me!

And..

Brought my favourite recipe books back into the kitchen and decided the only thing to do, was to convert my most prized cake and bake recipes and bring them into the Gluten Free world.

And here we have it!

That’s how it was done, I recreated them all one by one and realised that with a combination of a few added ingredient’s, these work every time.

Oohhh, and in my life, I just don’t have the time, space or the inclination to blend my own Gluten Free flour… So I use ready blended flour that I find in the health food or supermarket shelves.

And I’ve also included a staple recipe such as a lasagne…

When I first went Gluten Free, I found Gluten Free lasagne sheets, expectantly got them home and then realised they expected me to boil each one in a humungous pan of salted boiling hot water before I layered the lasagne…

So for quite some time I decided that I just couldn’t be bothered to make it.

However M&S then introduced the no-cook lasagne sheets and I have been eternally grateful.

There are other brands who have now followed suit, however I remember my absolute joy, the first time I found them in M&S.

And There is also another lasagne recipe that I’ve included, yes, Tuna Lasagne which I absolutely adore. Its so creamy and delicious and a real treat for everyone.

And how you seen how often Gluten can be contained in Rice dishes???

So I even include my most baked and loved recipe, which is chicken and rice. I share my go to herbs and spices that I use and you can you can include with no fear of gluten. This rice is so flavoursome, that I use it to accompany everything! These spices may not yet be in your spice cupboard, but I can assure you they will be in there as soon as you have the recipe!

And after my trials and tribulations, my baking is now back to where it’s been all my life, I look at a recipe and recreate it into the Gluten free world.

I also realised, it would be good to have a Gluten Free Angela Bake Club where I can pass on all these learnings to you..

We want simple recipes, that create exceptionally tasty baked creations, you know the really easy and tasty ones that anyone would happily eat, not realising they’re Gluten Free.
