What to Make with Gluten Free Miso

Yes I know, you think I’m going to make a broth or a savoury dish, but did you know you can make cake with it?

REALLY?

Yes, honestly you can.  And even more importantly – it tasted absolutely delicious!

Now within the cake I added burnt butter, you do this by melting the butter and continuing to heat it until it stars to foam and froth.  You take it off the heat at this point and the bubbles will eventually reduce.

You’ll see that the liquid butter has changed from golden, to a brown colour and the smell has changed to a beautiful butterscotch too!

Let it cool for a few minutes and this is when I added a sachet of the clearwater gluten free miso.

Let this cool and use as you would in your gluten free cake recipe.

Now for the topping!!!

Now, I’m not a fan of coffee cake as I find there is always a ton of sweet buttercream on top.

I always prefer my buttercream with less sugar and more butter and cream in as I just don’t enjoy things that are too sweet.

So here’s the thing that makes this incredibly sweet and salty at the same time…

Create a Miso glaze!

Make a sugar glaze with equal parts of sugar and water (50 G and 50 ML) in a pan and heat to dissolve the sugar.

When that’s done, take off the heat and add half a sachet of Miso and stir until all combined.  As the clearwater is brown miso, its got a much stronger taste than the white miso that many gluten eating peeps will enjoy.

Now add around 50 G of walnuts, wither in halves or in pieces, and when all combined gently spread over the still warm cake!

Allow to cool and await the most incredible taste sensation that you have ever experienced!
